Bhindi Fry Masala

Ingredients:
- 1 pound of fresh okra (bhindi), cut into small pieces,

- Once the cumin seeds start to splutter, add the grated ginger and garlic and saute for a minute.
- Add the chopped onions and saute until they turn translucent.
- Add the chopped tomatoes and all the spices (turmeric powder, coriander powder, garam masala powder, red chili powder, and salt) and mix well.
- Add the sliced okra to the pot and mix everything together.
- Close the Instant Pot lid and set the pressure cooker to “manual” mode for 3 minutes.
- Once the timer goes off, let the pressure release naturally for 5 minutes before opening the lid.
- Give the dish a good stir and fry the bhindi for a few more minutes until they are slightly crispy.
- Your delicious Bhindi Fry Masala is now ready to serve! Enjoy it hot with rice or roti.
